    1/4 cup low salt chicken broth
    1 medium onion, chopped
    2 cloves garlic, minced
    1 jalapeno pepper, seeded and minced
    3 medium tomatoes, chopped
    1/4 cup chopped fresh parsley
    1 tablespoon curry powder
    1 1/2 teaspoons ground cumin
    1/2 teaspoon ground black pepper
    1/4 teaspoon ground turmeric
    2 cups water
    4 cups peeled, chopped butternut squash

    Recipe



    Heat broth in a large saucepan. Add onoin, garlic, and jalapeno, and saute until onion begins to soften, about 3 minutes. Add tomaotes, parsley, curry powder, cumin, black pepper and turmeric. Saute for 3 additional minutes. Stir in water and squash, bring to a boil, and reduce heat. Simmer, stirring several times, until sqush is tender, about 30 minutes. Serve hot.
