    Butternut Squash in tomato Sauce

    List of Ingredients




    1/2 tablespoon butter or margarine (or use broth or cooking spray for this step)
    1 medium onion, sliced
    3 stalks celery, sliced
    1 medium butternut squash, seeded, cut into 1-inch cubes and peeled
    1 14-1/2 ounce can tomatoes, undrained
    2 teaspoons tomato paste
    1 teaspoon grated orange rind
    1 bay leaf
    1/2 teaspoon oregano
    1/8 teaspoon pepper

    Recipe



    In a large skillet, melt butter; add onion and celery. Cook until tender. Add squash; cover and cook for 5 minutes.
    Place tomatoes in blender; purée. Add to skillet with tomato paste, orange rind, bay leaf, oregano, and pepper. Cover; simmer for 20 minutes, stirring occasionally, or until squash is tender. Discard bay leaf.
