4 cups cauliflower florets
1/2 cup white wine vinegar
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 clove garlic, minced
1/2 teaspoon mustard seeds Recipe
Blanch cauliflower florets in boiling water for 3 minutes. Drain. Heat wine vinegar with basil, oregano, garlic and mustard seeds in a small saucepan. As soon as vinegar comes to a boil, pour it over the cauliflower in a glass bowl. Marinate overnight in the refrigerator. Author recommends serving with cherry tomatoes and small steamed new potatoes garnished with minced parsley.
