Cauliflower Puree with Garlic

1 1/2 cups low sodium vegetable broth
1 medium head cauliflower, broken into florets
1/2 cup chopped onions
2 tablespoons pureed roasted garlic
ground black pepper
1 tablespoon thin sliced fresh basil Recipe
In a large nonstick saucepan over medium high heat, bring the stock to a boil. Add the cauliflower and onions. Reduce the heat to medium, cover and simmer for 20 minutes, or until the vegetables are very tender. Drain in a colander. If desired, save the stock for soup or other uses. Place the vegetables in a blender or food processor. add the garlic. Season with pepper. Puree until smooth. Stir in the basil. If desired, return to the saucepan to reheat gently for 2-3 minutes.
