.Choosing and Storing Vegetables

Asparagus: look for firm smooth round spears, closed compact tips, rich green color. Warp stems in moist toweling; refrigerate in plastic bags and will keep 2-3 days.
Broccoli: look for small, closed buds with no trace of yellow; firm yet tender stems and branches. Refrigerate in plastic bags; will keep 3-5 days.
Eggplant: look for firm, heavy body; small blossom-end scar; rich purple color; shiny, tight smooth skin. Storein cool place or in fridge; put in plastic bag to retian moisture; will keep 2-4 days.
Snap beans: crisp, long slender pods, seeds less than half grown, good color. Refrigerate in plastic bags, wil keep 2-5 days.
Snow or sugar snap peas: crisp, slender, bright green pods with immature peas. Refrigerate in plastic bags, will keep 1-2 days.
Summer squash: firm, glossy tener skin; fairly heavy for size, slender. Refrigerate in plastic bags; will keep 3-5 days.
Tomatoes: firm, plump bodies with uniform color; small blossom-end scar. Ripen and store at room temperature; will keep at least a week.
