1 pound eggplant
1/3 cup lemon juice
1/4 cup minced onion
1 tablespoon chopped fresh parsley
1 teaspoon minced garlic
1/4 teaspoon black pepper Recipe
Prick eggplant with a fork. Broil eggplant for 20 mnutes, turning several times. Peel eggplant and chop pulp. Mix eggplant with lemon juice, onion, parsley, garlic and black pepper. For variety, you can use half lemon juice and half lime juice. Add 1 jalapeno pepper, seeded and minced, 1 tsp. ground cumin, 1/4 tsp ground cinnamon and 1 tsp ground coriander.
