Eggplant Portabella Chili

List of Ingredients
(original recipe called for 1 Tblsp Olive Oil )
1 Onion, chopped
1 Eggplant, peeled/chopped
3 Portabella Mushrooms, trimmed and chopped
2 Garlic, minced
2 Tblsp Tomato Paste
28 oz Crushed Tomatoes
3 Tblsp Chili Powder
1 tsp Marjoram
1 cup Water
2 Jalapeños Chiles (optional), seeded & minced
Rice or noodlesRecipe
Heat oil in sauce pan over medium heat. (or use broth or water or cooking spray for this step)
Add onions, cover, and let cook for about 5 minutes, stirring a few times.
Add the eggplant, mushrooms, chiles, garlic, and cover.
Cook for about 10 minutes until vegetables are tender.
Stir in the tomato paste, tomatoes, chili powder, marjoram, water, (salt and) pepper.
Simmer, uncovered over medium-low heat, stirring occasionally, until the chili thickens; about 30 minutes.
Serve over rice or noodles
