Jalapeno Ginger Green Beans w/ Potatoes

4 cups water
3 cups cubed potatoes
3 cups fresh green beans, cut in 2" lengths
3 medium carrots, chopped
1/2 cup low sodium chicken broth
2 medium onions, sliced
1 jalapeno pepper, seeded & minced
2 cloves garlic, minced
1 teaspoon minced fresh gingerroot
1/4 teaspoon ground black pepper Recipe
Bring water to a boil in a saucepan. Add potatoes, green beans and carrots. Return to a boil, reduce heat, cover and simmer for 5 minutes. Heat 1/4 cup broth in another saucepan. Add onions and jalapeno, and saute until onions begin to soften, about 3 minutes. Stir in garlic, gingerroot and black pepper, and saute for 2 additional minutes. Stir in potato mixture and remaining broth, and simmer until potatoes are just tender, about 5 minutes.
