Kale with Cinnamon

1 med onion minced
1 tsp vegetable oil (see note below)
1 clove garlic minced
1/8 tsp ground cinnamon
1 lb kale finely chopped
1 cup vegetable stock
1 tsp red wine vinegar
pepper
chopped fresh chives Recipe
Saute the onion in the oil for 5 minutes (or use additional stock or cooking spray for this step). Add the garlic and cook for 2 more minutes. Stir in the cinnamon, and add the kale, tossing it to coat with the mixture. add the vegetable stock. Cover and simmer for 15 minutes. Season with vinegar, pepper, and chopped fresh chives.
