Leeks w/ Garlic & Mustard

1 cup low sodium chicken broth
4 leeks, washed, halved lengthwise , then cut itno 1/4" strips at a diagonal
1 clove garlic, chopped
1 tablespoon fresh parsley, chopped
2 tablespoons apple cider vinegar
1/2 teaspoon dried mustard Recipe
Bring broth to a boil in a nonstick skillet on medium-high heat. Add leeks and garlic to the broth, cover, and simmer until leeks are tender, about 10-12 minutes. Remove from heat, drain, transfer to a large bowl, and stir in parsley, vinegar, and dried mustard. Ready to serve.
