Lemon-Fried Shiitakes

1 tablespoon fresh lemon juice
12 large shiitake mushrooms stems cut off
(original calls for 1 pinch salt)
1 pinch freshly ground black pepper Recipe
Pour the lemon juice into a heated sauté pan and drop in the shiitakes, dark side down, in a single layer. Dust lightly with (salt and) pepper. Cook for 2 minutes, turn, and remove from the heat, allowing the mushrooms to finish cooking in the retained heat.
