Lemon-Garlic Kale

2 tablespoons low salt chicken broth
1 medium onion, chopped
2 cloves garlic, minced
6 cups kale, stems removed (and discarded)
3 tablespoons lemon juice
1/2 teaspoon black pepper Recipe
Look for small bunches of rich green kale without any yellowing leaves. Heat the broth in a large skillet. Add onion and garlic, and saute for 2 minutes. Add kale and lemon juice, reduce heat to low, and cook until kale is tender, about 8 minutes. Drain excess liquid, transfer to a serving dish, sprinkle with black pepper, and serve.
