Oven-Glazed Rutabagas

4 rutabagas, ends trimmed
1 medium onion, coarsely chopped
1/4 teaspoon ground black pepper
1 1/2 tablespoons packed brown sugar (off plan)
1 small clove garlic, minced Recipe
Preheat the oven to 375ºF. Microwave the rutabagas on high powder for 4 minutes, turning the rutabagas once, to make peeling easier. Allow to stand until cool enough to handle. Peel and cut into 1" cubes.
Coat a nonstick baking sheet with nonstick spray (or line with nonstick foil). Place the rutabagas and onions on the sheet. Mist with nonstick spray. Sprinkle with the peper. Toss to coat and spread in an even layer. Bake for 35 minutes, stirring twice during the baking time. Sprinkle evenly with the brown sugar and garlic. Bake for10 minutes, or until the vegetables are golden.
