Parsnips with Pearl Onions

1 cup low salt vegetable stock
12 ounces parsnips, cut into 1/2" pieces
1 cup frozen pearl onions, thawed
2 plum tomatoes, diced
1/2 teaspoon dried thyme
1 teaspoon tiny capers, rinsed, drained

In a large nonstick skillet over high heat, bring the stock to a boil. Add the parsnips; cover and cook for 4-5 minutes. Add the onions; cover and cook for 4-5 minutes. Reduce the heat to medium high. Add the tomatoes and thyme. Cook, stirring, until most of theliquid is absorbed. Add the capers. Season to taste with the pepper.
