    Mashed Root Vegetables

    List of Ingredients

    * 1 lb parsnips, peeled and cut into 1 inch pieces
    * 1 lb yams, peeled and cut into 1 inch pieces
    * 1 lb red skinned potatoes, peeled and cut into 1 inch pieces
    * 1 cup reserved root vegetable liquid
    * 1/4 tsp ground ginger
    * 1/4 tsp black pepper

    Recipe

    Bring pot of water to a boil. Add vegetables, cook until just tender, stirring occasionally, about 20 minutes. Drain vegetables, reserving 1 cup of liquid in another container. Return vegetables to pot. Mash until smooth. Mix in 1/4 cup of reserved liquid, adding more to obtain desired consistency. Add ginger and pepper to season.
