    Ratatouille with Red Wine

    List of Ingredients




    1 medium eggplant, diced
    1 cup chopped onion
    3 cups sliced yellow summer squash
    1 large green bell pepper, seeded, diced
    1 cup peeled sliced cucumber
    2 cups fresh low salt canned chopped tomatoes
    1/2 cup low salt tomato puree or paste
    1 clove garlic, crushed
    1 cup red wine
    1 teaspoon splenda
    1 teaspoon dried basil leaves
    pinch cayenne pepper

    Recipe



    Place eggplant, onion, squash, green pepper, cucumber, tomatoes, tomato paste or puree, garlic, red wine, splenda, basil and cayenne in a large heavy saucepan. Simmer over low heat for 40 minutes or until vegetables are tender.
