Good candidates are: celery, fennel, leeks, onions, carrots, potatoes, zucchini, tomatoes, peppers, winter squash, cauliflower, broccoli, eggplant, broccoflower, turnips, kohlrabi, beets and sweet potatoes.
To roast vegetables, cut them in like-size pieces (no smaller than 1" cubes) and place in a foil lined baking dish. Lighlty coat with nonstick cooking spray. Season with ground spices, finely chopped herbs or minced garlic. Toss and bake at 375ºF, stirring occasionally, for 45 minutes to 1 hour, or until the vegetables are tender and browned. If they start to brown too fast, cover them loosely with foil and continue baking until tender.
