Good candidates are: celery, fennel, leeks, onions, carrots, potatoes, zucchini, tomatoes, peppers, winter squash, cauliflower, broccoli, eggplant, broccoflower, turnips, kohlrabi, beets and sweet potatoes.
To roast vegetables, cut them in like-size pieces (no smaller than 1" cubes) and place in a foil lined baking dish. Lighlty coat with nonstick cooking spray. Season with ground spices, finely chopped herbs or minced garlic. Toss and bake at 375�F, stirring occasionally, for 45 minutes to 1 hour, or until the vegetables are tender and browned. If they start to brown too fast, cover them loosely with foil and continue baking until tender.
