List of Ingredients
Large cabbage,
10 cloves garlic
6 chilies (dried chilies work too, but then add them to 1/2 of the water hot!)
small whole toms (romas work well)
2 large onions
two teaspoons each of celery, coriander, dill
distilled waterRecipe
Shred and dice ingredients, in two inch layers, add small amount of herbs, repeat until container two inches from top add water, and ferment, at 72-78f
Prep Time: two hours
Cook Time: ferment 8-10 days
Well, I confess I HAVE been known to throw a light (them bulbs get warm) into a cupboard during the winter when I needed to ferment something. I never bothered checking the actual temp, although it seems to do the trick.
