Shiitake Mushrooms with Radicchio

List of Ingredients
4 sun dried tomatoes (NOT oil packed)
1 cup water
1/4 cup low sodium tomato juice or sauce
2 cloves garlic, minced
1/2 medium onion, chopped
1 cup coarse chopped shiitake mushroms
4 cups shredded radicchio
3 tablespoons balsamic vinegar
1/4 teaspoon ground black pepper Recipe
Soak tomatoes in water for 30 minutes, then drain and chop. Heat tomato juice in a large skilelt. Add garlic, onion and sun dried tomatoes, and saute until onions begin to soften, about 4 minutes. Add msuhrooms, radicchio and vinegar, and saute for 8 minutes more. Remove from heat, sprinkle with black pepper, and serve.
