Simmered Carrot-Pineapple Curry

2 cups juice-packed canned crushed pineapple (reserve 1/2 cup juice)
1 1/2 tablespoons brown sugar (or use brown sugar twin)
1/2 teaspoon curry powder
3 cups shredded carrots Recipe
Combine pineapple juice, brown sugar and curry powder in a nonstick skillet. Stir until well combined (and sugar is dissolved). Sitr in pineapple and carrots. Reduce heat, cover and simmer, stirring occasionally, for 15 minutes.
