Summer Zucchini

List of Ingredients
1/2 cup boiling water
1/4 cup dry-pack sun dried tomato halves
1 pound zucchini, thinly sliced
1 onion, thinly sliced
1 small yellow bell pepper, diced
2 cloves garlic, minced
1/4 cup chopped tomatoes
1 tablespoon thinly sliced fresh basil
2 teaspoons balsamic vinegar

Place the water and sun-dried tomatoes in a small bowl. Let stand for 10 minutes. Drain and finely chop. Set aside. Coat a large nonstick skillet with nonstick cookign spray. Add the zucchini, onions, yellow peppers and garlic. Cover and cook over medium-high heat, stirring occasionally, for 4-5 minutes, or until the vegetables soften and start to brown. If needed, add 1-2 tsp. water to prevent sticking.
Add the chopped tomaotes and sun-dried tomatoes. Uncover and cook over medium-high heat, stirring occasionally, for 5 minutes, or until the vegetablesare tender. Stir in the basil and vinegar. Season to taste with the black pepper.
