    Sweet & Sour Red Cabbage

    List of Ingredients




    1 head red cabbage (shredded)
    1 medium apple unpeeled, cored, shredded
    1 small potato peeled, shredded
    1 small onion chopped
    1 lemon juiced
    3 tablespoons firmly packed brown sugar (or use brown sugar twin or splenda)
    1 tablespoon red wine vinegar

    Recipe



    In a large covered nonstick frying pan cook cabbage, apple, potato, and onion over low heat for 15 minutes, stir occasionally. Add lemon juice, splenda and vinegar. Cover, cook over low heat an additional 10 minutes, stirring often, until vegetables are tender and mixture thickens slightly.
