2 cups chopped sweet potatoes
2 cups chopped turnips
2 cups chopped parsnips
2 cups chopped potato
8 cloves garlic, peeled and left whole
1 tablespoon dried thyme
1/2 teaspoon ground black pepper
1/4 cup chopped fresh parsley Recipe
Preheat oven to 375 degrees. Combine all the ingredients except the parsley in a large heatproof casserole. Bake, stirring occasionally, until vegetables are tender-crisp, about 1 hour. Remove from oven and allow to cool sllightly. Transfer to a serving platter and garnish with parsley.
