Thyme Roasted Root Vegetables

1 cup chopped sweet potatoes
1 cup chopped turnips
1 cup chopped parsnips
1 cup chopped potato
4 cloves garlic, peeled and left whole
1/2 tablespoon dried thyme
1/4 teaspoon ground black pepper
1/8 cup chopped fresh parsley Recipe
1. Preheat oven to 375 degrees. Combine all the ingredients except the parsley in a large heatproof casserole.
2. Bake, stirring occasionally, until vegetables are tender-crisp, about 1 hour. Remove from oven and allow to cool slightly.
3. Transfer to a serving platter and garnish with parsley.
Makes 8 – 1/2 cup servings of carbs.
