    1 1/2 teaspoons olive oil (or use broth or cooking spray)
    1 cup shredded carrots
    1 cup thinly sliced onions
    1 cup mung bean sprouts
    1 cup sliced mushrooms
    4 egg whites
    1 small head Boston lettuce

    Recipe



    In a nonstick frying pan over medium-high heat, heat the oil. Add the carrots and onions. Stirfry for 3 minutes. Add the sprouts and mushrooms; stirfry for 3 minutes. In a cup, whisk the egg whites with a fork until frothy. Add to the vegetables. Stir slowly with afork until the whites are cooked, about 1 minute. Separate the lettuce into individual leaves. Divide the vegetable mixture evenly among the lettuce. Loosely roll up the leaves and eat with your hands.

    buny's note: this yields 2 servings of: 2 oz protein & 2 cup veggies.
