Baked Cauliflower

* 1 large cauliflower
* 1 onion, chopped
* 2 tbsp parsley, chopped
* 1 clove garlic, minced
* 16 oz stewed no-salt added tomatoes (if you can't find them, try diced tomatoes instead)
* 1/4 tsp fresh ground pepper
Recipe
Break cauliflower into small florets. Combine everything in a casserole dish. Cover and bake at 350 degrees for 40 minutes or until tender.
