1 pound parsnips, scrubbed and trimmed
Recipe
Cut parsnips in half lengthwise. Place in a saucepan with enough water to cover; cover pan and bring to a boil. Lower heat to a simmer; cook for 15 to 20 minutes or until tender. Drain.
NOTE: Peeling is not usually recommended for parsnips since most of their flavor and sugar lie just beneath the skin; they should, however be well-scrubbed.
