Cauliflower Stuffing

2 medium onions, peeled and chopped
1 cup sliced mushrooms
1/2 cup chopped celery
1 tablespoon vegetable oil
1 carrot, peeled and grated
1 (16-oz.) package frozen cauliflower, thawed and drained
1 teaspoon poultry seasoning
Recipe
In a skillet over medium heat saute onions, mushrooms and celery in oil until onions are beginning to brown and celery is soft. Remove from heat and set aside.
Steam carrot and cauliflower until tender. Place in a mixing bowl and mash until smooth; add poultry seasoning. Combine sauted vegetables with carrot mixture and mix well.
Use as poultry stuffing or spoon into a baking dish and bake at 350ºF 40 to 45 minutes. Serve hot.
