List of Ingredients
12 carrots, cleaned, sliced diagonally 1/4 inch thick
6 jalapeno chiles, cleaned cut into strips lengthwise
2 medium onions, sliced 1/4" thick
4 bay leaves
1 teaspoon whole dried basil
1 cup white viengar
2 cups water
Recipe
Put all ingredietns ecept for oregano into a large pot. If vegetables are not covered, add additional liquid in a ratio of 1 part vinegar to 2 parts water until covered. Bring to a boil and simmer for 3-4 minutes. Stir in oregano and put a lid on the pan. Allow to cool.
Carrots should be crisp-tender after coolign. If carrots are too crunchy, bring back to a boil and cook additional time. Remove bay leaves. Measure 1 cup per serving. Each serving yields 1 cup Vege A
