Mixed Mushroom Saute

List of Ingredients
1/2 pound domestic mushrooms, quartered
1/2 pound fresh wild mushrooms trim and slice (morel, shiitake, oyster, etc)
1/4 cup finely chopped shallots
1/2 cup dry white wine
2 tablespoons chopped fresh tarragon or 1 tsp dry
2 tablespoons chopped flat leaf parsley
Recipe
Heat a large nonstick skillet and spray with cooking spray. Add the mushrooms and cook over medium high heat, stirring frequently, until they produce liquid and begin to soften and brown, about 4 minutes. Add the shallots and cook, stirring, for 1 minute. Add the wine and tarragon to the skillet. Cook, uncovered, over medium heat until most of the liquid is reduced and absorbed and the mushrooms are tender, 2-3 minutes. Season with salt and pepper to taste, and sprinkle with parsley before serving. Serves 4.
