    Spinach Fritters

    Recipe Introduction

    From member flower girl: I've been experimenting with spinach as I've been terribly bored with plain spinach! These turned out fantastic!

    List of Ingredients

    * 1 pkg frozen chopped spinach, thawed
    * 1 cup chopped onions
    * 1 cup chopped mushrooms
    * 1/4 tsp garlic
    * 1/2 tsp pepper
    * 3-4 egg whites
    * 1/4 cup oat flour

    Recipe

    Mix together and place in a drainer over a bowl with 2 paper towels folded and a small plate to drain the excess fluid. This takes a few hours. Discard the excess fluid, place the spinach mixture in a bowl, add egg whites and oat flour to hold it together. Cook these like pancakes in a skillet, flipping to cook each side. Eat as is, or top with tomato sauce that has been blended with pepper and garlic or spaghetti sauce.
