Veggie Combo for a Rice Bowl

"I make a large amount of the following combination and then use it to make a type of "rice bowl." I put my 1/2 cup of rice, 2 oz. chix, and 1 cup of the following in a microwave bowl and that is my lunch at work. It is delicious and keeps well in the fridge:"
List of Ingredients
Put into a large stock pot:
2-4 zucchini's, sliced
1 each of red, yellow, and green peppers, cut into pieces
1-2 onions
3-4 chopped fresh tomatoes
1/4 cup fresh, sliced mushrooms
1-2 fresh garlic cloves (depending on taste)
Italian seasonings (basil, oregano)
Black pepper to taste
2 small cans salt-free tomato sauce
1/2 to 1 cup of water (or salt-free, fat-free chix broth, if you prefer)
Recipe
Bring to a boil, then simmer until vegetables are tender. When cool, place in a large, covered bowl and place in fridge.
