    Wilted Korean Spinach

    List of Ingredients

    8 cups fresh spinach, washed, trimmed, chopped
    1 teaspoon white rice vinegar
    1 teaspoon fresh lime juice
    1 teaspoon soy sauce (low sodium)

    Recipe

    In a 5-quart stainless steel saucepan, combine spinach, white rice vinegar, lime juice and soy sauce. Cover and cook on low heat until the spinach is just-wilted, about 4 minutes. Uncover, raise heat to high, and cook briskly for a minute to reduce the spinach juice. Do not allow to scorch. Serve hot.
