    Zesty Vegetable Stirfry

    List of Ingredients

    2 cups rice
    2 teaspoons peanut oil (or cooking spray or chicken broth)
    1 yellow squash, cut into 1-inch pieces
    1 head broccoli, cut into bite-size pieces
    1 large red bell pepper, peeled, seeded, cut into 1-inch pieces
    1 large red onion, peeled, cut into 1-inch pieces
    1/2 cup low-sodium vegetable broth
    1 lime, juiced
    1/8 teaspoon cayenne pepper

    Recipe

    Prepare rice according to directions; set aside. Heat oil in a large nonstick skillet over high heat (or use cooking spray or broth). Add the squash, broccoli, red bell pepper and onion. Cook until they begin to soften, stirring frequently, about 5 minutes. Add broth and cook until reduced by half. Sprinkle with lime juice and cayenne pepper. Serve over rice.
