Zucchini w/ Tomatoes

1/4 cup water, chicken or veg. broth, or wine
1 onion, sliced
1 green bell pepper, sliced
3 cups sliced zucchini
1/4 teaspoon black pepper
4 large tomatoes, chopped
2 tablespoons fresh charped parsley Recipe
heat water, broth, or wine in large skillet over medium heat. Add onion a nd green pepper. Cook until vegetables are tender. Add more liquid if needed during this process. Add zucchini, black pepper, tomatoes and parsley. Simmer for 30 minutes. Variation: delete the tomatoes and substitute 3 cups tomato juice instead in same point in the recipe. Simmer for 40 minutes or until tomato juice forms a thick sauce.
