To store bread for more than a day after baking, wrap it snugly in foil or seal it in two plastic bags. If the weather is cool and dry, yeast bread will keep at room temp for 4-5 days, quick bread (made with baking powder) for 2-3 days. Refrigerating bread is preferable in hot and humid weather (which encourages mildew), although the texture will be coarsened slightly. Most yeast breads will keep in the fridge for up to 2 weeks, quick breads for up to 1 week.
When frozen, both yeast and quick breads retain their original texture and freshness for up to 3 months at 0 degrees. For convenience, slice yeast bread before freezing; you can then remove a slice or two at a time. To defrost frozen bread, leave it at room temp for a couple of hours. Or defrost in a microwave oven according to manufacturer's directions - usually 1-4 minutes. Or wrap in foil and warm in a preheated 400�F oven for 15-25 minutes. Whatever the storage method, rewarm bread to restore freshness.
