    Serves 12, at 1 carb each.

    Pork Rind Pizza Crust

    8 ounces cream cheese -- softened
    4 large eggs -- room temperature
    1 cup crushed pork rinds
    1/4 cup parmesan cheese
    2 cups shredded cheddar cheese (or Italian cheese)
    3/4 tablespoon oregano -- or Italian spices
    1/2 tablespoon garlic powder

    Preheat oven to 425. Mix cream cheese and eggs, until smooth. Add crushed pork rinds, seasonings, garlic, parmesan cheese and mix well. Add Italian cheeses and mix well. This is a very thick mixture.

    Now plop this mixture onto a pizza pan, cover with plastic and roll out to the edges with rolling pin. Bake the crust for 20 minutes. Remove from the oven and let stand 10 minutes. Top with pizza sauce, mozzarella cheese and other toppings and bake again until bubbly.

    Per Serving: 203 Calories; 17g Fat (73.6% calories from fat); 12g Protein; 1g Carbohydrate; trace Dietary Fiber; 112mg Cholesterol; 324mg Sodium.


    I use this one except for three eggs instead of four and the recipe I have calls for the Italian cheese which is easily found with all the bags cheese in the grocery store. Also it is best to make the crust earlier in the day and let it cool completely before doing the sauce and toppings. Don't over cook the crust because it will brown up more on the second cooking. Great recipe!
