    250 gram shelled brazil nuts
    3/4 cup plain flour
    250 gram walnut halves
    1/2 tsp. baking powder
    2/3 cup mixed peel
    3 tablespoons cocoa
    1 cup stoned dates
    2/3 cup castor sugar
    1/2 cup raisins
    3 eggs
    1 cup red and green glace cherries
    1 tsp. vanilla
    1/2 cup glace ginger



    Line base and sides of a loaf tin (22cm X 14cm X 8cm) with greaseproof or baking paper. Butter well. Place fruits and nuts in large bowl, saving some for the top. Sift together flour, baking powder, coca and sugar. Add to fruit and nut mixture and mix well. Add beaten eggs and vanilla. Pack mixture into loaf tin. Top with fruits and nuts. Bake in cool oven 120° C for 2 1/2 hours. Cool 1/2 hour in tin. Remove paper. To store, wrap in foil and refrigerate.
