    List of Ingredients




    1 can Campbell's Beef Consomme
    1 lg. Ripe Tomato - skinned
    1 sm. red pepper -char grilled and skinned
    1/2 carrot - finely grated
    1/2 stick of celery
    6-8 slices of Lebanese Cucumber
    1 sm. red onion
    1 med. glass of sherry
    1/4 cup parsley - finely chopped
    1 tablespoons olive oil
    1 tablespoons vinegar
    Fresh black pepper
    1 clove crushed garlic (optional)



    dice vegetables very finely and marinate 1 - 2 hours in oil and vinegar, stir occasionally, add a little fresh black pepper (salt not needed) - make up consomme and add sherry - make some small ice cubes (2-3 per serve) and sprinkle with parsley and freeze. - when ready to serve add vegetables to consomme, stir and add ice cubes - sprinkle with parsley - serve with a baguette, Turkish bread or any ready to tear up bread


    Note: This recipe came from a Spanish friend in London in 1968. He had no idea of the quantities as his "mother always makes it". It turns out like a liquid French salad without the lettuce, except it is Spanish
