    AUTHENTIC IRISH SODA BREAD

    1-1/2 lbs flour
    1 teaspoon baking soda
    1 teaspoon cream of tartar
    1 teaspoon salt
    1/4 pint buttermilk (5 ozs.)

    Mix above ingredients together. Knead on floured counter for approximately FIVE (5) minutes.

    Shape into a circle. Cut into four (4) wedges. Cook slowly on floured griddle (electric frying pan) until bread rises and there is a white skin on top, approximately 5-6 minutes.

    Increase heat until brown underneath. Turn gently and brown on both sides.

    Takes about 15 minutes cooking time all together.
