    SPINACH OMELETTE


    1/4 cup chicken broth*
    1/3 cup onion, finely chopped
    1 clove garlic, minced
    1 cup brocolli flowerets, chopped
    6 fresh spinach leafs, chopped
    1/2 cup redd bell peppers, cut in thin slices
    1/2 cup mushrooms, thinly sliced
    4 eggs
    1 tbsp. water
    pepper and salt to taste


    *******************FOR BEST RESULTS, USE EGGS AT ROOM TEMPERATURE************************

    In large 10" tefkib frying pan, baring chicken broth to boil, add onions and garlice and saute until onions become transparent. Reduce heat tosimmer. Add broccoli, red pepper and mushrooms and saute for approx., 2-3 minutes. Stir in spinach, cover and cook until spinach is wilted.

    Combine eggs with water, add pepper and whisk until well blended. Gently pour egg mixture over vegetables and cook over low heat until egg mixture is cooked but not dry.

    DO NOT TURN OR FOLD. Cut into 4 pieces. Transfer to service plate. Add spicy salsa on top of eggs or as a side dish.
