    MARVELLOUS MUSSELS


    List of Ingredients


    • 3 STALKS CELERY
    • 1/2 RED PEPPER (CHOPPED
    • 1/2 GREEN PEPPER CHOPPED
    • 1/2 MEDIUM ONION CHOPPED
    • 2 CUPS CLAMATO JUICE
    • 2 DOZEN MUSSELS
    • 2 TBSP. EXTRA VIRGIN OLIVE OIL
    • RED PEPPER FLAKES
    • RED WINE (OPTIONAL)
    • 1 PACKAGE LINGUINE OR FETTUCINI
    • GRATED ROMANO OR PARMESAN CHEESE


    Instructions


    1. CHOP THE RED PEPPER, GREEN PEPPER, CELERY AND ONION INTO SMALL PIECES AND ADD TO OLIVE OIL IN DEEP FRYING PAN.

    2. SPRINKLE VEGETABLES WITH DESIRED AMOUNT OF HOT PEPPER FLAKES

    3. ADD 2 CUPS OF EXTRA SPICY CLAMATO JUICE AND APPROX. 1/2 CUP DRY RED WINE

    4. ALLOW TO SIMMER APPROXIMATELY 1 HOUR ON LOW HEAT. (YOU MAY NEED TO ADD MORE CLAMATO JUICE AS SOME OF THE JUICE WILL EVAPORATE WHILE COOKING)

    5. PLACE CLEANED MUSSELS IN PAN ON TOP OF VEGETABLES, COVER AND WHEN ALL THE MUSSELS HAVE OPENED, REMOVE FROM PAN

    6. PREPARE PASTA WHILE MUSSELS ARE COOKING

    7. PUT PASTA IN INDIVIDUAL BOWLS, POUR SOME SAUCE OVER THE PASTA AND SURROUND THE EDGE OF EACH BOWL WITH APPROXIMATELY ONE DOZEN OF THE MUSSELS.GRA

    8. SPRINKLE WITH PARMESAN OR ROMANO CHEESE ...... ALSO YOU CAN DIP CALABRESE BREAD INTO THE SAUCE

    9. ENJOY!!!!!
