PARMESAN POTATO WEDGES

- 2 TEASPOONS BUTTER OR MARGARINE
- 2 TEASPOONS VEGETABLE OIL
- 1/4 CUP GRATED PARMESAN CHEESE
- 1/4 TEASPOON DRIED ROSEMARY (OPTIONAL)
- 2 MEDIUM BAKING POTATOES
Instructions
- MICROWAVE BUTTER AT HIGH FOR 20 TO 30 SECONDS, UNTIL MELTED. ADD OIL AND SET ASIDE.
- MIX CHEESE WITH ROSEMARY.
- SCRUB POTATOES AND CUT IN HALF LENGTHWISE AND THEN CUT EACH HALP INTO THREE OR FOUR WEDGES. BRUSH CUT SIDES OF POTATOES WITH BUTTER MIXTURE AND ROLL IN CHEESE MIXTURE. PLACE WEDGES, CUT SIDE UP, IN SINGLE LAYER ON LARGE ROUND PLATE OR MICROWAVEABLE ROASTING RACK.
- MICROWAVE ON HIGH, COVERED, FOR 8-10 MINUTES, TURNING AND RE-ARRANGING WEDGES TWICE DURING COOKING.
- LET STAND 5 MINUTES. SEASON WITH SALT AND PEPPER.
