    Golden Peach Muffins

    List of Ingredients


    • 1 1/2 C flour
    • 1 C sugar
    • 3/4 tea salt
    • 1/2 tea baking soda
    • 1/8 tea ground cinnamon
    • 2 eggs
    • 1/2 c vegetable oil
    • 1/2 tea vanilla extract
    • 1-15 1/4 oz can sliced peaches, drained and finely chopped


    Instructions


    1. In a bowl combine the dry ingredients.
    2. In another bowl combine the eggs, oil, and vanilla; stir into dry ingredients, just until moistened (batter is very thick)
    3. Fold in peaches.
    4. Fill muffin tins (sprayed with Pam) 2/3 full.
    5. Bake at 350 for 25-30 min. Take out and cool 5 minutes before removing to a wire rack.


    Final Comments


    Yield: 1 dozen (I got 1 1/2 doz)
