Golden Peach Muffins

List of Ingredients
- 1 1/2 C flour
- 1 C sugar
- 3/4 tea salt
- 1/2 tea baking soda
- 1/8 tea ground cinnamon
- 2 eggs
- 1/2 c vegetable oil
- 1/2 tea vanilla extract
- 1-15 1/4 oz can sliced peaches, drained and finely chopped
Instructions
- In a bowl combine the dry ingredients.
- In another bowl combine the eggs, oil, and vanilla; stir into dry ingredients, just until moistened (batter is very thick)
- Fold in peaches.
- Fill muffin tins (sprayed with Pam) 2/3 full.
- Bake at 350 for 25-30 min. Take out and cool 5 minutes before removing to a wire rack.
Final Comments
Yield: 1 dozen (I got 1 1/2 doz)
