    Carrot Coconut Bread

    List of Ingredients




    3 eggs ( room temp)
    1/2 cup oil
    1 1/2 teaspoon vanilla
    2 cups shredded carrots (about 5)
    2 cups coconut
    1 cup sugar
    1 cup raisin (optional)
    1 cup chopped walnuts
    2 cups flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 1/2 teaspoon cinnamon
    1/2 teaspoon salt

    Recipe



    Preheat oven to 350 degrees.

    In large mixing bowl, beat eggs until light in color. Stir in oil, vanilla and sugar. Blend in carrots, coconut, nuts, and raisins. Let stand for 10 minutes.

    In large bowl combine flour, baking powder, baking soda, salt, and cinnamon. Add to carrot mixture, stir only until it is well blended. Spoon into well greased 9 x 5 inch loaf pan. Bake for 1 hour or until toothpick inserted in center come out clean.
    Remove from pan and cool on wire rack.
    Wrap tightly in aluminum foil or plastic wrap and allow to mature for 3 days
