    Herbed Scrambled Eggs with Asparagus

    List of Ingredients




    Ready In: 15 minutes
    Servings: 4

    8 oz (225 g) thin asparagus
    1 Tbsp (15 ml) extra virgin olive oil
    6 large eggs
    1 Tbsp (15 ml) sour cream
    1 Tbsp (15 ml) chopped fresh chives
    1 tsp (5 ml) chopped fresh tarragon, or 1/4 tsp (1 ml) dried
    Salt and freshly ground pepper to taste



    Recipe



    Remove the tough lower portion of the asparagus and cut the remaining
    spears into 1-inch (2 cm) pieces.
    Heat the olive oil in a large non-stick skillet over moderate heat and saute the asparagus until bright green, about 2 to 3 minutes.
    Beat together the remaining ingredients and add to the skillet.
    Stir constantly until the eggs are done to the degree you prefer.
