Smashed Potatoes
2 T butter plus 2 T for mashed potatoes
1 med. onion
1 clove garlic (chopped fine)
2 T brown Sugar
1 T Balsomic Vinegar
2 Bacon strips (chopped finely)
2 1/'2 lbs. potato
1/2 C Sour Cream
1 T Chopped Basil
1/3 C parmesean cheese
Heat butter, add garlicand onion and cook till soft. Add sugar and vinegar. Cook 10 minutes until onion is carmelized.
Cook bacon.
Boilpotatoes till tender. Mash potatoes with extra butterand Sour Cream till smooth.
Stir in onion, basil, bacon and cheese. Garnish with parm cheese and herbs.
