    Armadillo Eggs

    List of Ingredients


    • Breading mix (can use ready-made type for onion rings, etc.)
    • 1 tsp garlic powder
    • 1 Tbsp sugar (optional)
    • 1/4 tsp black pepper
    • 1/4 tsp cayenne pepper
    • 1/4 cup minced onion
    • 1 cup shredded Cheddar cheese
    • 1 cup shredded Monterey Jack cheese
    • 1/4 cup minced parsley
    • 1 egg
    • 1 dozen fat, small jalapeno peppers
    • Vegetable oil


    Instructions


    1. Mix your preferred breading mix with the garlic powder, sugar, and pepper (black and cayenne). In a separate bowl, mix minced onion, cheeses, and parsley. Beat the egg in a separate bowl. Wash, core, and seed the peppers, leaving them whole (open only the very tops for seeding).

    2. Dip the peppers in the beaten egg, then stuff with the cheese mixture. Pack firmly. Dip stuffed peppers again in the egg and roll in the breading.

    3. Deep-fry in vegetable oil until golden brown. Serve while hot. You may want to prepare more than one dozen initially -- they're good! Great snack with a nice picante or honey mustard dip. Enjoy!

      Makes 6 servings (2 peppers each).
