- Breading mix (can use ready-made type for onion rings, etc.)
- 1 tsp garlic powder
- 1 Tbsp sugar (optional)
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 cup minced onion
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup minced parsley
- 1 egg
- 1 dozen fat, small jalapeno peppers
- Vegetable oil
Instructions
- Mix your preferred breading mix with the garlic powder, sugar, and pepper (black and cayenne). In a separate bowl, mix minced onion, cheeses, and parsley. Beat the egg in a separate bowl. Wash, core, and seed the peppers, leaving them whole (open only the very tops for seeding).
- Dip the peppers in the beaten egg, then stuff with the cheese mixture. Pack firmly. Dip stuffed peppers again in the egg and roll in the breading.
- Deep-fry in vegetable oil until golden brown. Serve while hot. You may want to prepare more than one dozen initially -- they're good! Great snack with a nice picante or honey mustard dip. Enjoy!
Makes 6 servings (2 peppers each).
