Mini BLT Salads

"BLTs are delightful every which way you can enjoy them. We love turning them into an easy-to-serve salad that's drizzled with a delicious Greek yogurt dressing."
List of Ingredients
◦ 12 leaves lettuce (butter or romaine) or endive spears
◦ 8 slices crispy-cooked bacon, crumbled
◦ 1 cup cherry tomatoes, chopped
◦ ½ teaspoon sea salt
◦ ½ teaspoon black pepper
◦ ¼ cup diced chives
Rinse lettuce leaves and pat dry. Fill each lettuce leaf evenly with bacon and tomatoes. Sprinkle with sea salt and black pepper.
❧ BLT Greek Yogurt Dressing:
◦ ½ cup plain Greek yogurt
◦ ¼ cup mayonnaise
◦ 1 teaspoon lemon juice
◦ 1 clove garlic, minced
◦ 3 tablespoons diced chives
◦ ¼ teaspoon sea salt
◦ ¼ teaspoon black pepper
Whisk together ingredients in a small bowl and drizzle over salads. Finish with a sprinkling of diced chives.
