    Sauce: Barbecue Sauce

    Source of Recipe

From "My Family Table" by John Besh

    Recipe Introduction

"This basic sauce works well with any fruit jam. Instead of blackberry, I'll often use our local fig preserves. The key is to balance the sweetness of the fruit with vinegar and mustard."

    List of Ingredients

    ◦ 1 tablespoon canola oil
    ◦ 1 onion, chopped
    ◦ 1 cups blackberry or other fruit preserves
    ◦ cup apple cider vinegar
    ◦ ⅔ cup ketchup
    ◦ 2 heaping tablespoons Creole mustard
    ◦ 1 clove garlic, minced
    ◦ teaspoon cayenne pepper

Heat the oil in a small saucepan over high heat. Add the onions and stir until golden brown.

Lower the heat to medium and add the preserves, vinegar, ketchup, mustard, garlic, and cayenne, stirring well to incorporate.

Reduce to a simmer and cook for 10 minutes.
Remove from heat and allow to cool.

    Serves 6
